Ralphs is a major supermarket chain in the Southern California area and the largest subsidiary of Cincinnati-based Kroger. It is the oldest such chain west of the Mississippi River. Sliding in under the radar during the holidays, chef Alex Reznik threw open the doors to Ditmas Kitchen and Cocktails this week, his new Pico-Robertson neighborhood restaurant full of communal tables and farm-to-table aesthetics on one side, and a white-tablecloth dining room on the other. Reznik hit the local scene at Ivan Kane’s Cafe Was during his Top Chef: New Orleans stint, and then went on to open the kosher steak and sushi spot La Seine. Ditmas is his first solo venture as chef and owner, so it’s more personal, from the name (inspired by the Brooklyn street Alex grew up near) to the culturally diverse menu of dishes inspired by family recipes. He’s serving up shareable plates like soft pretzels with horseradish mustard; whitefish rillettes with brioche; short-rib flatbread with salsa verde and Fresno chiles; salmon pastrami with parsnip puree; and duck consomme with schmaltz matzo balls. And, yes, it’s kosher. Cocktails are made with small-batch spirits, seasonal ingredients and special housemade tinctures, and beers hail from local brewers and beyond. Ditmas opens daily from 4 PM-midnight.
